Product Description

Bone removal is the stage that decides whether a fish line pays. Every gram of meat left on the frame is gone for good, and the loss repeats on every fish the plant runs. Cutting the fillets cleanly off the spine is therefore less a quality question than an arithmetic one.

What the QG350 does

The QG350 runs a knife belt along the backbone. Instead of splitting the fish into two fillets, it cuts along the spine so the fish separates into three pieces: two fillets and the frame with the remaining meat attached.

That three-piece cut is the reason the yield holds up. The belt follows the spine rather than cutting across the ribs, so the fillets come away whole and the frame leaves with less meat on it.

Yield after head removal is over 85%. On a line running hundreds of fish an hour, the difference between that and a cut that loses a few percent more is the whole margin on the stage.

Fresh and semi-thawed

The QG350 works on fresh and semi-thawed fish. Both states hold the fish firmly enough for the belt to follow the spine; hard-frozen blocks are a different process and are reduced with a fish saw first.

This matters for planning. Where a plant receives frozen fish, the thawing or tempering step has to be sized to bring product into the working range before it reaches this machine.

Where it sits in the line

Bone removal follows the filleting and butterfly stages, where the fish has already been opened and lies flat for the belt. Product then moves on to skinning and slicing, or the frame goes to a meat picker to recover the meat still attached to it.

The QG350 is one stage of the fish processing line; the machines before it set the size and orientation the belt works with.

FAQ

What yield should I expect?

Over 85% after head removal on the fish the machine is specified for. Test it on your own species and size, because bone structure differs between them.

Does it work on frozen fish?

No. It works on fresh and semi-thawed fish. Frozen blocks are cut with a fish saw before this stage.

What fish sizes are available?

Models cover fish heights of 110 mm, 190 mm and 240 mm. Choose against your product range, not the average size.

How does it differ from a fillet-splitting machine?

The QG350 cuts along the spine into three pieces rather than splitting the fish in two. The different cut is what improves the recovery from the frame.

Can the frame still be used?

Yes. Recovering the meat left on the frame with a picker is a normal next step, and it is where the last few percent of yield comes from.
