How a Contact Cooker Works: Conduction Cooking Explained

A contact cooker (belt grill) uses direct conduction — the most efficient heat transfer method in food processing. Here is how it works step by step:

  1. Product enters on a bottom conveyor belt at the infeed

  2. A second belt descends from above, sandwiching the product between two heated surfaces

  3. Internal heating plates (electric or gas-heated) transfer heat through the belts and into both sides of the product simultaneously

  4. Adjustable belt gap pressure ensures consistent contact regardless of product thickness

  5. Product exits fully cooked, with optional grill marks or seared surface

Maintenance & Food Safety

  • Daily cleaning: Belts must be scrubbed and sanitized after every production run. The TINDO design allows quick belt removal without tools.
