The figures that depend on the individual order — rated output in kg/h, connected heating power, oil volume and belt width — are set with the customer at enquiry stage, because they follow from the product being fried rather than from a catalogue line.

How the oil filter system works

The filter loop is plumbed into the fryer's oil circuit and runs while frying continues. Oil is drawn from the bath, passed through the filter, and returned — so the fryer is never sitting idle waiting for an oil change, and the oil is not left to accumulate debris between shifts.

Two things follow from that arrangement:

  • Impurity removal is continuous, not periodic. Large particles — batter fragments, crumb, coating that has come off a product — are taken out of circulation as they appear rather than settling at the bottom of the tank and carbonising there.

  • Temperature stays uniform along the fryer length. Because oil is moving through the circuit rather than sitting still, the heat profile is even from the infeed end to the discharge end. On a 3-metre immersion section, an uneven profile shows up as product that is pale at one end of the run and dark at the other.

Particles that stay in the oil are what drive oil degradation: they scorch, they darken the bath, and they transfer that colour to the next product through it. The filtration and removal hardware integrates with the fryer's insulated oil tank and circulation pump, so oil can also be returned to the tank when the fryer is cleaned.

Why electric heating on this order

Electric heating removes three constraints at once:

  • No combustion path. There is no burner, no gas train and no flue to interlock. For plants where a gas line cannot be extended to the frying area — or where a new gas installation would need its own approval cycle — electric is the shorter route to a working fryer.

  • Tight control near the setpoint. Electric elements respond to the controller without the thermal lag of a burner, which is what makes a ±1 °C control band practical at the setpoint the product needs.

  • Simpler hygiene and housekeeping. No combustion air intake and no exhaust products in the frying hall, so the extraction duty is limited to frying fume.

The trade-off is honest: electric heating concentrates the load on the electrical supply rather than spreading it across gas and power. That is why the electrical specification is settled first on an electric fryer project, not last.

Specifying for a US plant: what to fix before the order

Electrical supply

Care and cleaning

The fryer's conveyor lifts mechanically so the tank bottom can be reached for cleaning after daily production. The oil loop allows oil to be moved back to the tank for that operation, and filtration during production keeps the interval between deep cleans longer. A: A skimmer takes floating debris off the surface by hand, which is a manual, intermittent task and depends on an operator being available.
