Discover how to choose a fryer machine quickly with our expert tips. Learn what to communicate to suppliers to find the best industrial deep fryer machine for your requirements.
If you are looking for an industrial deep fryer and want to find the best solution from a supplier, it’s important to communicate your specific needs. This way, the supplier can make tailored recommendations for you.
There are three main heating methods for industrial deep fryers, each with its unique advantages. Below, we will analyze each heating method.
This is a traditional heating method that uses an electric heating tube as the primary component to heat the oil by converting electrical energy into thermal energy. It is the most popular heating method for deep fryers. However, it may not be suitable for areas with limited power resources.
This method is often favored by customers in regions where liquefied gas or natural gas is inexpensive. It can be categorized into three types based on the installation of the burner:
A. The burner heats directly in the pipe at the bottom of the oil tank. This is the oldest heating method and poses several safety risks, such as potential cracks in the pipe that could lead to flames and fires. Additionally, this method requires a large amount of oil and makes it difficult to clean up accumulated impurities.
B. A gas-heated boiler incorporates a reasonable pipe coil within it. Cooking oil is pumped into this coil and then returned to the fryer. This method allows for continuous heating and circulation, avoiding the dangers associated with the first type.
C. Building on the previous method, a heat exchanger is added. Instead of heating the cooking oil directly in the boiler, a heat transfer oil is heated and then used to heat the cooking oil within the heat exchanger. This method is safe, efficient, and conserves cooking oil use. However, the inclusion of both a heat exchanger and a boiler increases overall costs, which some customers are willing to pay for the benefits.
This is a newer heating method that is currently less common, primarily due to the limited popularity of electromagnetic technology, even though it offers several advantages. In this method, electromagnetic heating coils are installed at the bottom of the fryer, allowing the metal plate at the bottom of the oil tank to generate heat. For optimal thermal efficiency and longevity of the electromagnetic coil, the metal plate should be made from Q235 or Q430 materials, with a layer of SUS304 material. Using only SUS304 will reduce thermal efficiency and shorten the life of the electromagnetic coil. This method represents the heating approach used in our electromagnetic heating frying pan.
Obviously, this requires thermal oil as a medium for heating cooking oil. For this reason, you need a thermal oil boiler. Next, you have two options:
1) Install the pipes used to circulate thermal oil at the bottom of the fryer oil tank, immerse the edible oil in these pipes, and the thermal oil in the pipes transfers heat to the edible oil.
2) Add a heat exchanger to exchange the heat of the edible oil and thermal oil in the heat exchanger to achieve the purpose of heating the edible oil. This is a reasonable solution. It has high heating efficiency and is easy to clean. The life of the edible oil will be extended.
I believe that after reading the above heating methods, you will have your own choice and find the answer, which one is more suitable for you.
The following table allows you to more easily understand the advantages and disadvantages of fryers with different heating methods.
Heating method | Heating position | Advantage | Disadvantage |
Electric Elements | Located at the bottom of the fryer oil tank, usually in the middle gap of the lower mesh belt | Affordable price, Heating tube is easy to replace | The heating tube is easily carbonized by impurities. |
Induction heating | The electromagnetic coil Coil is located outside the fryer oil tank. | High heating efficiency, 20%-30% energy saving | Expensive, usually 30% more expensive than ordinary electric heating tubes |
Gas Heating | The flame of the burner is in the pipe at the bottom of the oil tank | Heating fast, The flame directly heats the oil, with less heat loss | 1. Pipelines take up a lot of space and oil consumption increases significantly 2. There are safety risks |
External gas boiler | High heating efficiency Safety | Cooking oil impurities are easily accumulated in boiler pipes, causing carbonization and reducing heating efficiency.
External gas boiler + heat exchanger | High heating efficiency Safety Easy to clean, longer oil life | Cost increases, each heat exchanger costs about 5000-8000 US dollars
Thermal oil heating | The heat transfer oil pipeline is installed in the pipe at the bottom of the oil tank. | Low cost, Small footprint | You need to purchase a thermal oil furnace separately. Easy to accumulate impurities during frying |
External heat exchanger | High heating efficiency 2. Safe, easy to clean, and longer oil life | You need to purchase a thermal oil furnace separately Need to pay for the heat exchanger |
In addition to the heating method, we need to consider how to choose the right mesh belt for the fryer, which is also a very serious topic. We know that there are countless different foods on the market, such as puffed foods, nuts, meat products, chicken nuggets, pig skin, sausages, hamburger patties, etc. So when you search on the Internet, you will find many keywords, such as extrusion snacks fryer, chicken nuggets frying machine, peanuts fryer etc. But if we study carefully, we will find that they do have certain requirements for conveyor belts. Here I list several commonly used mesh belts:
Offers a flat surface with a high degree of stability and is suitable for most applications, including food processing, drying, and heat treatment. This type belt suitable for the food which is small pieces, such as a French fries fryer, potato chips fryer, or frying machine for diced vegetables or meat, extrusion snacks, pellets etc.
Provides a denser mesh for smaller parts or where finer filtration is needed, such as in baking or parts cleaning. This can be used for very small pieces food, size around 1-3mm, such as diced onion, diced prok skin etc.
This type belt is the most popular belt used in frying machine, it provide an open area and smooth surface. Fryer for chicken nuggets, burger patty etc. The space between the mesh normally is 6-8mm. so if the food size is bigger than 6mm, that is enough.
it is very strong, driven by stainless steel chain, made of stainless steel plate, and very suited to heavy load applications, This is a similar choice as Compound Balanced Weave mesh belt. But this one is more reliable. Also sometimes, the surface can be coated with Teflon to avoid food sticking on the belt.
Normally it is a belt coated with Teflon. For example item 4 plate link belt. Most times used for small capacity chicken nuggets fryer, when you produce the batter coated food, such as battered chicken nuggets, coated vegetables, when it drop into the oil and touch the belt which no coated Teflon, it is very easy to stick on the belt if no Teflon.
This is the most expensive belt. Each meter costs more than 1500-2000USD.This belt is better than the coated Teflon belt, because the coated layer maybe Falling off after a long time used. Because of its costs, so most times if the fryer length more than 5meters, we use 80cm to 100cm Teflon belt installed at the input side of the fryer. The other parts keep using SUS304 belt. This solution will save the buyer’s money and also avoid food sticking on the belt.
Comparation of different type of belts application
Belt Type | Suitable For | Price |
Compound Balanced Weave mesh belt | Food size less than 3mm Diced onion, vegetables | ●●●● |
SUS304 Balanced Weave belt | Small piece food less than 6mm French fries, potato chips | ●● |
Flat Wire Belts | Most food size bigger than 8 mm | ● |
Plate Link Conveyor Belts | All food | ●●● |
Teflon coated belt | All food | ●●●● |
Teflon Materials belt | All foods | ●●●●● |
This factor also determines the price of the fryer and affects the output of the fryer. Usually, you need to add 1m to 1.5m to the effective frying range you need, which is the total length of your fryer. Of course, some other structures of the fryer, such as the connection of the filter, the lifting function of the upper mesh belt, and the type of mesh belt, may affect the total length of the fryer.
The width of the fryer is relatively simple. If you already have other machines, such as chick nuggets processing line, you only need to tell us the width of your chicken nuggets forming machine mesh belt, and we will recommend the appropriate width for you. Usually the width of the mesh belt of the fryer is 200mm, 300mm, 400mm, 600mm, 800mm.
This does require careful consideration. But don't worry, most fryer suppliers will recommend you the upper mesh belt lifting structure according to your output or the size of the fryer. For example, if you have a small fryer with a total length of about 2.5 meters or less, we will recommend you to use the manual side lifting structure or the cylinder lifting structure.
If your fryer is longer than 3 meters, we will provide you with a structure that automatically lifts the upper mesh belt. The upper mesh belt is lifted by motor or hydraulic method, which makes it convenient for you to clean the fryer.

Many people have this question or do not understand the difference between the two. Batch fryer is a batch production machine that requires you to put in an appropriate amount of food at one time and then start working. Some batch fryers have a stirring function, such as Tindo's Batch Type Deep Frying Machine. It can also be equipped with an automatic feed hopper.
A continuous fryer is an automated machine. Food, such as chicken nuggets, enters the fryer from the front end and is output from the back end after a few minutes or longer or shorter time, and then enters the freezer. Continuous fryers are generally used in conjunction with other machines, such as chicken nugget forming machines and chicken nugget battering machines, to achieve automated production without manual operation.
The fryer is a deeply customized machine, and it needs to make different plans according to your needs. There is no standard fryer that can be used for all foods. This requires you to communicate more with the fryer supplier before purchasing, and don't be hostile to the questions raised by the fryer supplier to you, because they want to give you an efficient, professional and perfect fryer.
