The TINDO GRYZL refrigerated vacuum tumbler solves this by integrating a closed-loop RSA chiller system that maintains product temperature at 0–4°C throughout the entire marination cycle — no ice addition, no interrupted production, no compromised food safety.

Product Overview

The GRYZL series combines a heavy-duty SUS304 vacuum drum with an external RSA shell-and-tube chiller. Cold water circulates through a jacket around the drum, actively removing the frictional heat generated by meat-to-meat and meat-to-paddle contact. The result is a tumbler that delivers:

  • Consistent 0-4°C marination temperature, batch after batch, regardless of cycle length or ambient factory temperature

  • Zero reliance on ice — no dilution of brine concentration, no excess water in the final product

  • Extended cycle capability — run 90-120 minute marination for thick-cut beef or bone-in poultry without temperature creep

  • Faster post-marination chilling — product exits the tumbler already at processing temperature, ready for forming or packing

Key Features

Built-In RSA Chiller with Shell-and-Tube Evaporator

Unlike clip-on cooling jackets that struggle to remove heat from the center of a full drum, the RSA system circulates chilled water through a high-efficiency shell-and-tube evaporator with 6.2-35.4 kW cooling capacity depending on the model pairing. The chiller is sized to handle the worst-case thermal load — a full drum of 25°C meat brought down to 2°C within the first 15 minutes of the cycle.

SUS304 Stainless Steel Drum with Hygienic Internal Finish

The entire drum, paddles, and contact surfaces are fabricated from SUS304 stainless steel with a seamless internal weld finish. No threaded fasteners, no dead zones, no places for brine residue to accumulate. CIP (Clean-in-Place) compatible with sloped drain bottom.

Vacuum Degree 0 to -0.08 MPa

High vacuum opens meat fiber structure for rapid brine penetration. Combined with temperature control, the vacuum environment also inhibits aerobic bacterial growth during long cycles — a critical advantage for jerky and biltong producers running 90+ minute tumbling.

PLC Touchscreen with Recipe Memory

Store up to 50 recipe programs — each defining vacuum level, drum speed (2-12 rpm), cycle time, pause intervals, and target temperature. Operators select a recipe and press start. The PLC logs temperature data for every batch, traceable for HACCP and export audit requirements.

Variable Drum Speed 2-12 rpm

Low speed (2-4 rpm) for delicate whole-muscle products like chicken breast and fish fillets. High speed (8-12 rpm) for robust cuts like beef brisket and pork shoulder. Independently adjustable for forward and reverse rotation — prevents meat from balling up at one end of the drum.

Optional Chiller Upgrade Path

Every GRYZL model is delivered chiller-ready with pre-installed water circuit connections, temperature probe ports, and PLC chiller-control logic. If your budget or current requirements don't justify a chiller today, add an RSA unit later as a plug-and-play upgrade.

Q: What happens if the chiller fails during a production cycle?

The PLC detects rising temperature and triggers an audible alarm plus on-screen warning. If temperature exceeds your pre-set limit, the cycle auto-pauses. The tumbler can continue without refrigeration in emergency mode with manual temperature monitoring.

Q: How much water does the chiller consume?

The RSA is a closed-loop system. The 100L or 150L water tank is filled once at installation and recirculated. No continuous water supply is required — only periodic top-up for evaporation loss (approximately 5-10L per month).

Q: Can the machine handle frozen meat?

No. Meat should be tempered to 0-4°C before loading. Frozen meat does not tumble effectively, and the chiller is designed to maintain cold temperatures, not to freeze from ambient.

Q: Is the GRYZL compatible with 480V/60Hz for North America?

Standard configuration is 380V/50Hz. 480V/60Hz motors, controls, and chiller compressors are available by custom order. Lead time adds approximately 3-4 weeks.
